I love pesto. Its the perfect topping not only for pasta, but also great for sandwiches and pizza. Pesto is such an adaptable ingredient. It doesn't always have to always consist of basil, pine nuts and Parmesan, but can really be a combination of whatever you have on hand. In the past I've subbed in walnuts, pistachios, or almonds for the pine nuts and have used asiago in place of Parmesan depending on what's in my refrigerator/cabinets.
This particular time, I used Giada's recipe for Sun-dried Tomato Pesto. The only addition I made was to add a 1/4 cup of walnuts to the food processor. I also processed the cheese with the rest of the ingredients to make the pesto nice and smooth. Like most of my food posts, my favorite part about this recipe is that it's fast and easy!
