autumn spice cake

I'm trying to get the last of my autumn recipes in before we're deep into winter. Chicago gave us a little taste yesterday with some snow and the horrible memories of winter came rushing back. Supposedly we'll have some warm and sunny weather this weekend and I'll do my best to soak it all in before it's gone.

This loaf is a little more dense than the normal breads I make but it is truly the perfect compliment to a morning cup of coffee. My mom passed the recipe along to me and raved about it, so I had to try it.

I also have a slightly embarrassing confession to make. While making this bread I thought to myself, "hmm ginger is an odd spice to add to a bread..." As the bread was cooking, and I smelled the wonderful scents coming from my oven, it all clicked. "Ginger.... ohhhh ginger... bread. I see." I'll chalk it up to lack of sleep. And now the recipe. I used this recipe and left off the powdered sugar ... so I could eat it for breakfast without feeling guilty!



I suggest adding this to your weekend cooking line up.
