This cake reminds me of the chocolate cake in the movie Matilda (click here for a reference). It's actually a slightly disgusting portrayal of chocolate cake - but if you only have a slice or two, and not the entire cake, you should be fine. If anyone has a recipe for chocolate cake perfected - it's Hershey's. The chocolate buttercream frosting is one of the best I've ever tasted and resulted in lots of spoon and finger licking while assembling this beauty. I hope for my birthday someone bakes this for me!
Here's what you'll need...
2 cups of sugar
3/4 cup Hershey's cocoa
1 teaspoon baking powder
2 eggs
1 cup strong black coffee
1 teaspoon vanilla extract
1 3/4 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk
1/2 cup vegetable oil
Frosting
2 oz unsweetened chocolate, melted and cooled
3 3/4 cups confectioners sugar
1/2 cup of butter, softened
3-4 tablespoons milk
1 teaspoons vanilla
Here's what to do...
Heat oven to 350 degrees. Grease and flour two 9 inch round baking pans.
Stir together sugar, flour, cocoa, baking soda, baking power and salt in large bowl. Add eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed for two minutes. Pour batter evenly into prepared pans.
Bake 30-35 minutes or until toothpick comes out clean. Cool 10 minutes. Remove from pans to wire racks. Cool completely.
For frosting, combine sugar, butter, milk, vanilla. Beat until creamy, 1-2 minutes. Add chocolate. Add more milk if necessary to reach desired consistency.
This is another one of my favorite chocolate recipes from Hershey's. Chocolate Lava Cake made oh so easy. For a night of entertaining it cannot be beat. Your guest will surely be impressed.
P.S. Sorry if your new years resolution is to diet, eat healthy, avoid chocolate, etc...
