This is what you should make for breakfast this weekend. For real.
Here's what you'll need...
1 1/2 cups flour
1 cup sugar
1 tsp. baking soda
1 tsp cinnamon
1/2 tsp ground cloves
1/4 tsp allspice
1/4 tsp salt
2 eggs
1 cup pumpkin puree
1/2 cup butter, melted
1 cup chocolate chips
Here's what to do...
Preheat oven to 350 degrees. Grease or line muffin tin. Combine dry ingredients and set aside. Beat eggs. Add pumpkin, butter, chocolate chips. Blend dry ingredients into wet. Spoon into muffin tin. Bake 20-25 minutes (slightly less for mini muffins).
So Saturday and Sunday, and then throughout the week (if you make it that long), this is what you should have.

ReplyDeleteyum yum yum! I've been trying to make these for a while -- I made pumpkin gingerbread last week, and have been slowly eating my way to a pumpkin coma. I'll be in Boston braving the supposedly winter storm -- eek!
